Simple Pleasures.


1) Grilling Squash:


  • Begin by washing the green or yellow squash.
  • Discard both ends.
  • On a cutting board cut the Squash in shape about 1/2 an inch thick.
  • In a bowl mix olive oil, salt, and orgegano.
  • Using a cooking brush coat both sides of the  squash with the above mixture.
  • Set up the gas or charcoal grill or oven to heat up to 350 F.
  • Place the squash in only one layer leaving 1/2 inch of space between each piece so that heat can get between the sections and cook the squash evenly.
  • Put the squash either directly on the grill or on a foil paper if using the oven.
  • Grill the squash until it is just tender and slightly browned, about eight minutes on each side. Carefully turn the squash with the long-handled tongs so pieces don't tear off or slip between the grill grates into the flames.
  • Enjoy with a baguette french bread. Yummy
